Due to temperature, geomorphology and herb variety in Crete, the production of excellent honey is favored. Thyme, Phantom, oregano, pine, acacia, cumara, eucalyptus, citrus are natural bee food.
Crete is ranked 4th in the global honey production world-wide. The two most important species produced are thyme honey and pine honey.
Thyme honey is lighter, sweeter and more aromatic, while the pomegranate is darker and less sweet, often mixed with these two varieties when bees have access to both pine and thyme.
